  1. Take 500 gm colocasia leaves
  2. Make ready 1/4 tsp Baking soda
  3. Make ready Water
  4. Take For Batter
  5. Get 2 cups rice and gram dal corse flour (kanki-korma flour)
  6. Prepare 1 cup gram flour
  7. Make ready 2 cup buttermilk
  8. Prepare 2 tbsp green chilli garlic ginger paste
  9. Get Salt as per taste
  10. Prepare 1/4 tsp turmeric powder
  11. Take 1/2 tsp red chilli powder
  12. Get 1/4 tsp garam masala
  13. Prepare 2-3 tsp sugar
  14. Make ready For Tempering
  15. Make ready 4-5 tbsp oil
  16. Prepare 1 tsp mustard seeds
  17. Make ready 3 green chillies sliced
  18. Get 4-5 tbsp sesame seeds
  19. Take 1 tsp red chilli powder
  20. Take 2-3 tsp sugar
  21. Take 1 tsp lemon juice
  22. Take 2-3 tbsp water

A really good recipe from the Maharashtrian cuisine. I have Colocasia esculenta and if they are in too much sun, the leaves will adjust themselves so they are. I grow Colocasia in my North Carolina Garden and they do great in the heat of the summer. It has a great interplay of lights and shadows and lines with the very pronounced veins in its leaves.

Steps to make Colocasia Leaves (Paatra):
  1. Clean the colocasia leaves. Take plenty of water add baking soda. Wash the leaves and keep a side.
  2. For batter: in a bowl add flour, buttermilk, dry masala, salt sugar. Mix it all well. It should be thick batter.
  3. Now washed leaves and batter is ready. Clean the kitchen surface. Place the whole leaf apply the batter on leaf. Place the second leaf on it and apply the batter. In same way third leaf apply the batter.
  4. Close the leaf from both side. Apply batter. Roll the batter. Make tight roll.
  5. Put the steamer on stove. Add water on low flame on that place the steamer plate. Purge leaf roll in the steamer plate. Make all roll. Close the lid. Let it steam for 30 min. Check it with toothpick.
  6. Off the stove. Let it cool completely. Cut the roll with thread.
  7. Cut all the pieces ready. Now temper it. Keep pan/ kadhai on medium flame. Add oil, mustard seeds, let crackled. Now add green chillies sliced, sesame seeds. Let crackled too.
  8. Add red chilli powder, sugar, lemon juice, water. Mix it.
  9. Now add pieces of colocasia leaves. Mix it well.
  10. The tempering will coat the all pieces. Toast it for 5 min more and serve with ketchup.
