The ingredients needed to make Mutton korma:
  1. Prepare 1 kg Mutton Pieces
  2. Prepare 2 Medium Onions – thinly sliced
  3. Prepare 1 Cup curd
  4. Prepare 2 tsp Ginger+Garlic Paste
  5. Make ready 4 Tbsp Ghee
  6. Get 4 Tbsp Vegetable Oil
  7. Take 1/4 Cup Almonds
  8. Prepare 2 Drops Kewda Water
  9. Prepare 1 cup water
  10. Prepare 1/2 Tsp Turmeric Powder
  11. Get 2 Tsp Kashmiri Red Chilli Powder
  12. Get 1/2 Tsp Garam Masala Powder
  13. Make ready As per taste Salt
  14. Take 2 Small Cinnamon Sticks, broken
  15. Get 1 Tsp Cumin Seeds
  16. Get 2 Small Black Cardamom
  17. Get 3-4 Green Cardamoms
  18. Make ready 2 Cloves
  19. Get 1 Tsp Black Pepper Pods
  20. Prepare 3 Bay Leaves
Steps to make Mutton korma:
  1. Heat 2 tsp oil + 1tsp ghee in a pan/pressure cooker. - Add slivered almonds and saute for a minute or until lightly roasted. Remove from pan.
  2. In the same pan, saute onion until pinkish golden and remove from pan. - Cool both these ingredients.
  3. Then add sauteed almonds, onion and yogurt in a blender jar and make a thick paste. - Keep aside for later use.
  4. In the pressure cooker, add 2 tbsp oil + ghee. - Add the whole spices and saute for 1/2 second over medium heat.
  5. Add mutton pieces and saute for 2 minutes over medium-low flames. - Now add turmeric powder, Kashmiri chilli powder and saute.
  6. Add ginger+garlic paste and mix everything. - Now, add Almond-Onion paste, saute everything and let this cook over medium flame for 3 minutes
  7. After cooking for 3 minutes, add salt and remaining 'powdered spices' and mix everything.
  8. Let this cook for another 2-3 minutes, till you see oil separating and bubbling on the sides. - Add water and stir
  9. Cover with a lid and give it 3-4 whistles. Then turn off the heat.
  10. Once the Mutton Korma is cooked, transfer it to a serving bowl.
