Instructions to make Simple Rocky Road:
- Melt chocolate in a bowl suspended over simmering water. Be patient and resist the temptation to stir until it's almost all melted.
- Meanwhile break the digestives into smallish chunks (not dust) and cut the cherries in half.
- When the chocolate is all melted add all the biscuit chunks, most of the marshmallows and most of the cherries. Combine well.
- Pour the mixture into a lined traybake tin and push into the corners. Scatter the remaining cherries and marshmallows over the top and drizzle on any remaining chocolate.
- Chill for at least 1 hour before you attempt to cut it and 1 hour more before you eat it. NOTE: it can be difficult to cut so be careful.
