  6. When all the eggs are cooked through and a bit golden outside ready to enjoy with whatever you choose, salad, pickles…

When eggs are set but still shiny, sprinkle with cheese and chives. Fold one side of omelet partially over filling. Sprinkle omelet with cheese and pepper. Fold omelet in half, allowing cheese to melt. Slide cooked omelet onto a serving plate, and season with salt to taste.
