The ingredients needed to make Spanakopita Quesadilla:
  1. Make ready 4 large or 8 small flour tortillas, wholemeal also works

  12. Make ready 1/4 cup chopped dill or coriander or parsley

In a medium sauté pan heat the canna-olive oil. Think of it as a spanakopita minus the fussy phyllo, with all of those great eggy, cheesy Greek flavors crisped in a flour tortilla. Different from a multi-layered and time intensive spanakopita, but honestly, this is one great quesadilla. I used the strain Pineapple Thai for this batch of oil.

Steps to make Spanakopita Quesadilla:
  1. Saute the onions for 3-4 minutes over a medium low heat then add the spinach and garlic and saute again for another 3-4 minutes until spinach has wilted. Season with salt and pepper.
  2. Transfer the spinach mixture onto a plate and place in a cold place like the fridge for a few minutes.
  3. Next prepare the egg mixture, by whisking together the egg, cheese and herb of choice.
  4. Remove any excess moisture from the spinach by squeezing it with your hands and then add it to the egg mixture.
  5. Mix the egg mixture with the spinach and then divide into 4 equal parts and add each to 4 different halves of a tortilla and then fold the tortillas in half for large tortillas. For small tortilla 2 will be needed.
  6. Spray the pan with fry lite then fry for 2-3 minutes on each half on low and serve with sour cream, plain yogurt or other creamy dairy sauce of choice.

Different from a multi-layered and time intensive spanakopita, but honestly, this is one great quesadilla. I used the strain Pineapple Thai for this batch of oil. It is pretty powerful and gives me a relaxed and not very heady high. With high CBD content this is an amazing weed for folks trying to manage their pain and not get wasted.
