  13. Get 1 Cob of Sweetcorn
  14. Make ready 1 Carrot, peeled into Ribbons
  15. Get 1/2 Cucumber Chopped into Sticks
  16. Make ready 1/2 Avocado
  17. Take 1 Small Handful of Cashews, chopped
  18. Take 1 tsp Soy Sauce
  19. Make ready 3 tsp Mayonnaise
  20. Get 2 tsp Sriracha
  21. Take to taste Salt
Steps to make Fried Noodle Poke Bowl 🍲:
  1. In a pan add the chilli, garlic, and some of the ginger and oil on a low heat. After a minute add the noodles and stir fry until they are cooked. Add some salt if you would like some.
  2. Chop the mushrooms. Add the chopped ginger, chilli powder and sugar. Squeeze a segment of lime over the mushrooms. Cook until they are soft.
  3. Shred the lettuce. Assemble in a bowl with the carrot and cucumber. Squeeze a wedge of lime over the lettuce.
  4. Boil the sweetcorn in a small pan of water until a little cooked. Bring off the boil. Cut the corn off the cobb.
  5. Add the noodles and mushrooms to the lettuce. Top with the avocado, cashews, mint, sweetcorn and lime wedges.
  6. Make a Sriracha mayonnaise by mixing the mayo, some sesame oil, soy sauce and Sriracha together. Drizzle on top of the bowl and enjoy!
