  4. Now add cooked rice and coat it with the seasonings until no white remains on the rice
  5. Finally add Chipotle sauce and give a final mix and top with chopped scallions and serve immediately

Making your own Mexican Rice is far healthier, albeit a little more work, than making a packaged rice. But a homemade Mexican Rice won't have any preservatives and you can keep the sodium level down. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin. Heat olive oil in a large skillet over medium heat.
