  6. Take to taste Salt
  7. Prepare 2 tbsp lemon juice

Coriander lemon rice is a simple rice recipe with just coriander leaves and lemon juice mixed with cooked rice. Method Cook the rice according to the packet instructions and then stir in the coriander, lime zest and juice, salt and freshly ground black pepper and olive oil. Spoon into a bowl and serve. Stir in the coriander seeds and pepper.

  1. Simmer the rice, bay leaves and stock cube in water for 10-15 minutes. Stir once its off the heat.
  2. Let it rest for 10 minutes.
  3. Add the lemon juice, salt to taste and coriander. Stir well to combine. Serve and enjoy as a side.

Spoon into a bowl and serve. Stir in the coriander seeds and pepper. Add the parboiled rice to the pot, making a mound in the center. Lay the lemon zest over the top of the rice. In a saucepan, combine water or chicken broth, lemon (or lime) juice, rind, garlic salt and bring to boil.
