  1. Prepare elbow macaroni
  2. Make ready 15oz pink salmon, drained and flaked into small pieces
  3. Take dry onion powder
  4. Prepare Cheese Sauce
  5. Get AP flour
  6. Take unsalted butter
  7. Prepare finely minced garlic
  8. Get finely chopped parsley ( I use the frozen cubes sold in stores)
  9. Make ready cold milk (I used almond milk)
  10. Make ready ricotta cheese
  11. Make ready Shredded Cheddar
  12. Take Salt and pepper to taste
  13. Get Topping
  14. Get seasoned panko
  15. Get Melted butter..or more
Steps to make Salmon Mac N Cheese:
  1. Preheat oven to 425°F
  2. In a small bowl combine salmon and dry onion powder and set aside
  3. Cook the pasta in a large saucepan with salted water untill al dente
  4. While the pasta cooks, melt the butter in a medium saucepan along with the garlic and parsley. When butter starts to foam add the flour and mix for about a minute
  5. add the milk and constantly stir untill thickens, about 5 minutes at medium/high heat. You don't want it to boil.
  6. When the sauce starts to thicken turn off heat and add the cheeses. Mixing untill smooth.
  7. Taste to adjust seasoning.
  8. Place drained pasta in a large casserole dish. Add seasoned salmon, mix well. Then add the cheese sauce and mix together.
  9. Combine melted butter with the seasoned panko. Sprinkle some extra cheese on top and then the panko mix, covering evenly.
  10. Place in the middle of a 425°F oven untill golden brown and bubbling.
