Fold in the prawns, spring onions and parsley. Pour ½cm/¼in of olive oil into a large frying pan and place over a high heat. Leave until hot but not smoking, or until a drop of the batter sizzles immediately. When onion is tender and rice begins to brown lightly, season with pepper, and pour in the broth.

  7. Add the parsley rice to the cream and stir so all the rice is coated. Season with salt and pepper

Leave until hot but not smoking, or until a drop of the batter sizzles immediately. When onion is tender and rice begins to brown lightly, season with pepper, and pour in the broth. Reduce heat to low, cover Still, it is only rice, cooked in broth rather than water, with onions added.
