Reading it back to myself, I think I copied it verbatim from my mum's instructions. First, add butter, sugar, salt and water in a thick-bottomed pan and bring it to a boil. Then remove the pan from the heat and add in sifted cocoa powder and flour. Bring it back to the heat.

  1. Preheat the oven to 200C / 180C Fan / 400F and grease 2 baking trays or line with baking paper.

They’re ready when they are well risen, crisp and golden brown. - - Remove from the oven and split them with a sharp knife down the side to let the steam escape. Leave to cool on a wire rack.
  5. Whisk cream until thick add icing sugar and orange essence and whisk again. Fill each bun generously.
  6. Put the choc, butter and waterin bowl over hot water and melt. Don't let the bowl touch the water. When melted beat in icing sugar. Spoon over buns.

Then remove the pan from the heat and add in sifted cocoa powder and flour. Bring it back to the heat. Choux au craquelin is a dessert made with choux pastry, and topped with a thin cookie disc called craquelin. The craquelin is made with a mix of butter, sugar and flour - just like pie or shortcrust pastry. In contrast to regular choux pastry buns, craquelin adds a layer of sweetness and makes the cream puff delightfully crunchy.
