  1. Get 2 large onions
  2. Take 250 g chestnut mushrooms

  4. Take 200 g grated mature cheddar cheese
  5. Make ready 1/4 cup chia seeds
  6. Get 1/2 cup linseed/flax seeds
  7. Make ready to taste Soy sauce
  8. Prepare 1 tsp Marmite (optional)
  9. Make ready to taste Mixed spices
  10. Prepare 1 cup flour to bind
  11. Get Extra flour to coat patties
Instructions to make Cheese and Mushroom Veggie Burger:
  1. Saute chopped onions. Add minced garlic. Add chopped mushrooms and cook for a few minutes. When cool, transfer to large bowl.
  2. Add grated cheese, soy sauce to taste, Marmite if using for additional flavour. Add mixed spices to taste.
  3. Mix in chia seeds and linseed to add more protein and to absorb any excess moisture. Add flour to bind mix.
  4. Leave to rest for about half an hour for flavours to blend together.
  5. Put more flour on a plate to completely coat each pattie formed from the mix. Place each pattie on a sheet of grease proof paper on a baking tray.
  6. Cook at 200C/400F for about 15.minutes each side. Makes 6 -8 patties. Can be stored in fridge or freezer.
