  2. Prepare 2 tbsp red curry paste
  3. Take 190 ml coconut milk
  4. Take 2 tbsp fish sauce
  5. Take 1 tbsp brown sugar
  6. Prepare 400 g tin chopped tomatoes

It was one of those days when time just ran away from me. I had planned on making the traditional Chicken Curry for dinner. The chicken was thawed and chopped into pieces. Set the chicken breast-side-up on a rack in a roasting pan.

Instructions to make Roast chicken curry:
  1. Preheat the oven190°c,in large bowl combine the curry paste, coconut milk,fish sauce and brown sugar and pour the curry mixture into the chicken drumsticks and leave marinate for at least an a hour
  2. Add the tomato and gently mix through
  3. Place the chicken pieces in a baking tray and bake for 40 minutes or until the chicken is browned and the juices run clear
  4. Enjoy

The chicken was thawed and chopped into pieces. Set the chicken breast-side-up on a rack in a roasting pan. With fingers, carefully loosen skin from chicken breast and upper legs; rub coconut oil mixture under skin. Remove giblets from cavity and save for another use. Place chicken, breast side up, on a sheet of heavy-duty foil large enough to enclose it.
