  7. Take 2 Ripe Bananas
  8. Take 2 tsp Baking Powder

  11. Get 2 oz Softened Butter
  12. Take 4 oz Icing Sugar
  13. Take Few drops Vanilla Essence

In a large bowl, combine the flour, sugar, cinnamon, baking soda and salt. Add the eggs, oil, carrots and vanilla; beat until combined. In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

Instructions to make Carrot Cake:
  1. For the sponge, put all the above ingredients for the sponge in a bowl and mix well. Then pour into a medium sized round baking tin. Bake in oven for 40 - 45 mins at 170 degrees (fan assisted). Allow to cool.
  2. Cream cheese topping. Again put all the ingredients together in a bowl and mix thoroughly. Then apply to the top of the sponge.

In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour. For a gluten-free carrot cake, swap the flour for your favorite gluten-free flour blend. Baking soda helps the cake to rise. Salt, cinnamon, and vanilla extract make the cake taste amazing.
