In a small pot, combine plums, water, baking soda, butter and salt and bring to a boil, stirring occasionally. Pour into prepared cake pan and bake for one hour. Just before cake is done, place all sauce ingredients into a saucepan. Bring to a boil, stirring constantly, and continue boiling gently until sauce is thickened, about two minutes.

  1. Halve the plums, remove the stones. Run some butter across all of the inside of the pan, add the halved plums upside down into the pan. Sprinkle sugar over the plums, cook on medium heat for about 10 - 15 minutes. Keep an eye on them so that they dont burn.
  2. In the meantime make the batter. Stir all the other ingredients together. Adding the milk, cream or condensed milk little by little.

Just before cake is done, place all sauce ingredients into a saucepan. Bring to a boil, stirring constantly, and continue boiling gently until sauce is thickened, about two minutes. Remove done cake from oven and poke holes all over top with a fork. Add in vanilla extract/plum cake essence and mix well. Now fold in the flour mix and dry fruits (in three additions) Add prepared caramel syrup and mix well.
